DIY It – A Gradient Bar Cart and Frozen Mimosa Popsicles!

You guys! It feels like summer is flying by and I can’t even believe that the 4th of July is next week! Are you prepared for all the festivities? Don’t worry if you aren’t, because I partnered with 90+ Cellars and their bottles of tasty and affordable wines to bring you the perfect way to celebrate on not only the 4th, but all summer long with a DIY gradient bar cart and colorful mimosa popsicles!
Now that is one pretty bar cart is it not?! And can you believe that that it was made from an Ikea plant stand? All it took was a little spray paint and clear shellac sealant to transform the plain Ikea stand into the perfect summer bar cart.
And can we talk about those mimosa popsicles for a second? All those vibrant colors were made from fruit! Seriously. Well, I used blue curaçao and pineapple juice for the blue ones, but that vibrant pink is all natural thanks to pretty pitaya (aka pink dragon fruit).
So let me walk you through the process to make both.
Flat Spray paint in 5-6 colors ( I used Montana gold brand in Strawberry, Malachite, Lychee, Shrimp, Banana, and Malachite lite)
Spray shellac sealant.
Begin by spray painting the top and sides of the white top of the plant stand in diagonal bands. Once you have completed all the bands, go back and spray the lines were the two colors meet from a about 2 feet away from the surface to get a light blending spray.
Once all the colors are finished, let the paint dry and then give it a good solid coat of spray shellac sealant. Let the sealant cure and then repeat with a second coat. The last step is to assemble your plant stand turned bar cart.
Now for the popsicles!
Colorful Mimosa Popsicles:
Zip top popsicle bags
90+ Cellars Prosecco with it’s notes of fresh peaches, ginger, and lilac lends itself particularly well with these mimosa popsicles
Frozen strawberries, pineapple, pitaya
Simple syrup (heat 1 cup of water and 1 cup of sugar until the sugar dissolves and then let cool)
Blend equal parts frozen fruit and simple syrup to create your fruit purées. Then fill the popsicle molds half way with your fruit purée and top with the 90+ Cellars Prosecco. Hold upright to let the bubbles die down a bit and then seal the zip top and freeze. I made about 10 popsicles per bottle of prosecco.
For the different colors, I just mixed a combination of the above fruits and blue curaçao:
Bright Pink – Pitaya
Light Pink – Pitaya and Pineapple
Orange – Strawberry
Mint Blue – Pineapple and Blue curaçao
Blue – Same as above but more Blue curaçao
Yellow – Pineapple
Can you say yum?! And I love that although the prosecco is frozen, it retains is tingly bubbles as you eat the popsicles! Oh, and I totally didn’t even mean for the colors to match the bar cart. That was a complete and totally perfect accident! Hahaha!
